This course is an introduction to cookery and will give you a a wide range of foundation food preparation and cooking skills to help you step into a job or progress onto our Level 2 in Cookerly course.

You'll train alongside our professional chefs as part of the team in our student-run restaurant Enfields Kitchen. You'll also get the chance to work with some of our external partners organising and hosting events or working as part of their teams.

This course covers the following modules:

Maintaining food safety when preparing and cooking and serving food.
Prepare and cook basic dough products.
Prepare vegetables.
Cook vegetables.
Work as part of a hospitality team.
Prepare meat products.
Cook meat products.
Maintain customer care.

Assessment

We'll assess your progress as you go through the programme, giving you feedback to help you to improve where needed. Assessments will be carried out in our training restaurant and kitchens, Enfields Kitchen, and you'll be marked against the standards of the awarding body.

The teaching team

Your teaching team are all highly skilled and experienced staff. They adapt their teaching styles to suit different abilities and ensure they keep their skills up to date to adapt to modern techniques and changes in the industry.

We're connected with some of the best restaurants and tourism businesses in the region to give you a real insight into the world of work and a valuable work placement. Partners include 21 Hospitality Group, who own Cafe 21, St Vincent, The Broad Chare as well as several outlets in Fenwick, Peace and Loaf, the Marriott hotel chain, The Beamish Hall Hotel, Sage Gateshead, Marco Pierre White's Steakhouse, Bar and Grill and Beamish Museum.

Facilities, kit and equipment

All practical sessions are taught in our modern, well-equipped training kitchens which contain industry standard kit and equipment. Working as part of our professional service team in our student-run restaurant Enfields Kitchen, you'l prepare and serving meals to paying customers.

Next Steps

This course can lead to employment, to an apprenticeship or onto our Level 2 Professional Cookery course.

Required Entry Qualifications

There are no formal qualifications required but good GCSE grades are an advantage.

Other entry requirements

An informal interview with a member of our teaching team is essential.

Costs (excluding fees)

There will be a cost for the uniform and a set of professional knives. We'll let you know the price during the enrolment process. All items can be purchased through the college's preferred suppliers, ensuring you get the best rates. Funding support is available to those who meet the eligibiity criteria to help cover the cost. Please ask us more about this at our enrolment events.

Finance and funding

This course is free to those aged under 19 years old.
Most people aged 19 years and over can qualify for free or reduced price course fees and there are grants and bursaries you can apply for to help cover the costs of coming to college, depending on your circumstances.

If you already have a full level 3 qualification and are aged 19 years over, you can apply for an Advanced Learning Loan or pay the fee upfront in full and qualify for a 10% discount.
